After heavy holiday meals I really wanted something light, fruity and..nutritions. So I decided to make a super easy salad with orange, avocado and tahini. Tahini is a paste made of sesame seeds. And sesame seeds are a great source of Calcium! Orange adds some vitamin C we really need, and olive oil and avocado are excellent sources of monounsaturated fatty acids. Give it a try!

For the salad:
- 40 g (a bucnh) of lettuce
- 20 g (a cup) of arugula
- 1/2 of a big orange
- 1 avocado
For the salad dressing:
- 2 tbsp olive oil
- 1 tbsp tahini (for homemade: 2 tbsp sesame seeds and 1 tsp olive oil and a blender)
- 1/2 tsp balsamic vinegar
- 1/8 lemon
- salt, pepper
- sesame seeds (optional)
Preparation
- Rinse thoroughly lettuce and arugula.
- Cut 1/2 orange and an avocado in medium cubes. Cut lettuce in smaller pieces. Mix everything.
- Make the salad dressing: mix olive oil, tahini, balsamic vinegar, squeezed lemon juice, salt and pepper. If you don’t have already made tahini, no worries. You can make it by toasting your white sesame seeds in a pan for 3-5 min constanly mixing. Then put your seeds and olive oil in a blender and blend for 1-2 min until the texture is smooth.

Homemade tahini - Mix the salad with the dressing, sprinkle it salad with some sesame seeds. And of course enjoy!
